Ingrediants (Serves 2-3 people)
115 gm Phillips Crabmeat (approx ½ tub)
3 tbs cup Milk
1.5 tbs butter
1 small clove Garlic Minced
1 piece Shallot Minced
1tbs Onion diced small
1/4 cup Mushrooms sliced
1/2 small Zucchini Julienned
1/4 cup shredded Cheddar Cheese
1 Tbs Fresh Chopped Basil
1/2 Tsp Lemon Juice
Salt and Fresh Ground Black pepper
Cook garlic and shallots in butter for 1 minute in non stick pan. Add onion and mushrooms and cooked for about 3 minutes stirring frequently, add sliced zucchini, basil and lemon juice, cook for 1 minute then season lightly with salt and pepper.
Meanwhile combine eggs with the milk, beat well, and then add ¾ of the cheese. Next add crab meat to the zucchini and stir gently to combine and heat for 1 minute then pour the egg and cheese mixture over the top, give one stir, reduce heat and cover the pan for approximately 5-6 minutes.
When the eggs are set and the bottom of the frittata get a nice brown, remove pan from heat and flip frittata carefully out onto a large plate so the brown side is up.Immediately sprinkle with the remaining cheddar cheese and the chives. Serve hot or room temperature.
