Recently, some of the menu experts from our sales team were back on the tools to test our new products firsthand.  They were piloting concepts from our growing range to support the menu architecture of some our key customer segments. 

If you’re looking for a quick dish with high impact, consider this Tortellini de smoked bresaola, created by Norm, one of our Moco menu experts.  

Tortellini de smoked bresaola, whipped goats curd & ricotta, smoked romesco 

 Serves 6 [entrée] 

INGREDIENTS  

  • Smoked Bresaola (18 thin slices) 
  • 90g Goats curd 
  • 140g Ricotta 
  • Nutmeg 1/8 tsp 
  • Seasoning salt and white pepper to taste 
  • 1 Grana Padano 100g 
  • 6 tsp Extra Virgin olive oil 
  • 2 med Golden shallot 
  • 6 tsp Fig Vincotto 
  • Basil or rocket leaves to garnish 

SMOKED ROMESCO  

  • 225g roasted red peppers (pat dry) 
  • 1 tsp smoked paprika  
  • 1 tsp sherry vin 
  • 2sml cloves smoked garlic peeled 
  • ¼ cup smoked almonds 
  • ¼ cup extra virgin olive oil  
  • Pinch cayenne pepper ground  
  • ½ tsp smoked salt  
  • ¼ cup sundried tomatoes 

ASSEMBLY  

  1. Blend all romesco ingredients in an upright mixer to a course textured puree & set aside 
  2. Cut root from bottom of shallot and cut in half longways. Roast cut side down till tender and you can remove petals whilst they retain shape. Set petals aside  
  3. Beat goats curd and ricotta in a food processer until smooth and light. Grate fresh nutmeg using a microplane into ricotta mix. Season to taste.  
  4. Add 1tsp of ricotta mix into the centre of the sliced bresaola. Fold closest edge over mix to meet furthest edge and press hard. Fold the ends back in on themselves as you would tortellini. 
  5. Using the back of a spoon, spread the smoked romesco in a 10cm circle. 
  6. Grate parmesan with microplane then sprinkle over circle to create snow like effect. Remove excess from outside sauced circle.  
  7. Arrange three tortellini on top and three shallot petals around. 
  8. Drizzle with fig vincotto, olive oil and garnish with fresh basil or rocket.
