Caramelised Banana, Cinnamon & Walnut Pavlova

Caramelised Banana, Cinnamon & Walnut Pavlova

Ingredients:   serves 24

24 Country Chef Petite 20g Pavlova

300ml Bulla Thickened Cream

25g Western Star Unsalted Butter

35g Bundaberg Brown Sugar

40g Trumps Walnuts (lightly toasted & crushed)

1/2 Tsp Masterfoods Ground Cinnamon

26g Masterfoods P/C Squeeze on Honey

Sqeeze Edlyn Lemon Juice

2-3 Bananas

 

Method:

1. Peel and cut bananas

2. Squeeze a little lemon juice over the banana slices to prevent from browning

3. In a fry pan, melt butter and brown sugar over medium heat until dissolved

4. Add banana and cook on one side until golden and caramelised, then turn and cook the other side. Transfer to a plate to cool

5. Melt honey in a microwave for 10 seconds

6. Whip cream and cinnamon to soft peaks, add honey and continue to whip until firm peaks form

7. Top each pavlova with cinnamon cream, slices of banana and a sprinkling of crushed walnuts
